What the differences mean in practice

• Brew-then-steam: the Classic Pro is a single-boiler/dual-use machine — you brew, then wait for steam temperature (and back). The GT brews and steams simultaneously from separate boilers, which is the actual workflow difference that $1,150 buys.
• Temperature work: the GT's dual PID with 1° brew adjustment supports chasing light-roast extraction; the Classic Pro's fixed brass boiler is stable but not tunable without modification.
