What all four share

On-demand versions (Elite 65 OD, Evo 65 OD)

Up to three doses — single, double, or custom up to 30 seconds — are saved by time through the digital display. A notification bar reports when the grinder needs calibration, the grinding discs need replacing, or the hopper needs refilling. The Elite 65 OD adds Rancilio's SAS (Smart Adjusting System): based on parameters set by the technician at installation, it automatically regulates the grinding time whenever the grain size changes, keeping the dose constant.

Lever versions (65 AT, 65 ST)

The 65 AT is the automatic version and the 65 ST the semi-automatic version. Both dispense through a volumetric dispenser calibrated by the knob under the grounds container, with the dose delivered by the manual side lever.

Choosing between them

Per Rancilio's documentation: the on-demand versions suit workflows that grind to order with repeatability (the Elite's SAS targets consistency across grind changes), while the AT and ST lever versions suit traditional dosing-grinder workflows.
